Spicy Pork and Fennel Ragu w/Pasta

Chef Jonathan has put together this Sauce / Pasta pairing to specifically work with our Acheson Barbera and Moped Blend.  This is designed to be shared by the family for a main course (or as a Primo Piatto if you are Italian).

On a 1-10 scale of spicy, the sauce is about a 3.5 and will not blow your head off.  Just that touch of warmth compliments the richness of the pork.  Made with Seasoned Cubed Pork Shoulder, Fennel, Onion, Tomato, White Wine and Cream, all braised down for over 2 hours. The red fruit driven Barbera and Moped Red blend perfectly with the fennel and the lack of tannin in the wines means that there will not be an increaase of the heat.  It's like a warm blanket on a cool fall evening!

Heat the sauce, make the pasta and BAM! Dinner for 4pp.

Serves 4 and comes with a box of dried fettuchini.
